A Couple of Lunch Ideas

Since we had Rory’s Ribs on Monday and ate out on Sunday, we haven’t had any leftovers for lunch. So here’s what I’ve made the past couple days. Everything was actually leftover from last week’s grocery trip except the cheddar cheese and bread. On Monday, I made a BLTC (bacon, lettuce, tomato, and cheddar) sandwich and finished the bacon from the fridge. Tuesday, I made quesadillas with cheddar and black refried beans from the pantry. I also had an avocado a friend left for me that I needed to use as well as finishing the tomatoes from the market last week. I also added one of the peppers we bought this week for some crunch. Oh, and to top it off, I drizzled the red chili sauce from the Huevos Rancheros from last week. Enjoy the lunch eye candy!
