I can’t get enough of ‘em. I think my ideal job would be to become a burrito conniouseur. They’re versatile, cheap, and the fillings are endless. I rarely make the same one twice. This week I bought organic shaved beef from TJ’s, which cooked real quick and I sauteed it with mushrooms and a bit of hot sauce. I also added Amy’s Organic refried beans, fresh onion, tomatoes, homemade guac, and cheddar cheese. It was heaven. Along with a cold Heineken or Corona - summer doesn’t get any better. I’ve found a burrito truck in Williamsburg Brooklyn that is heavenly, but I have to admit I have some West Coast envy as I’ve read great things about burritos on wheels in LA. Will a burrito woo me to the East Coast nemesis for a tasting tour? I’m seriously considering it…. Please share your burrito combos and recipes!
